Multi-site businesses run four control points instead of one: acceptance of chilled goods, storage temperature, heating during preparation and holding temperature at service. The measured accordingly at goods-in, at the fridge, at the cooking station and at the holding container.

In a single restaurant usually only storage gets measured, because the kitchen is standing right there anyway. Across branches that is not enough: in a complaint the head office is not on site and has to prove the chain from the log.

Four points per site sounds like effort. For a concept with few products it comes to about a dozen tasks per branch — no more than that.

Recipe consistency is a process, not a statement of intent

Where sauces, dressings and sides are made in house, every item is a task of its own rather than a lump entry called "prep". Production is scheduled, assigned and documented — not left to how the day feels.

A chain means the guest gets the same thing at one site as at the next. That is not decided by the recipe on the wall but by whether production reliably happens and stays traceable.

In multi-site businesses a branch is not always a place. Some split one site by function — service, kitchen and production run separately — and end up with more units than buildings. Every crew gets its own list and its own reporting without a second team being needed.

The same goes for shifts: where the day starts at five in the morning and cannot be closed down in one go, the time window sits in the name of the shift — and closing duty is split in two.

The record set reaches further than hygiene

Alongside the statutory hygiene briefing, food hygiene and allergens sit first aid, fire safety, hazardous substances for cleaning and disinfection agents, general health and safety, machine instruction, work instructions for fish and meat — and youth employment law.

Anyone hiring across branches needs those records per person and on demand — not as a folder in one branch office.

Reading and confirming happens where the ticking off happens. The record then sits with the person, not in a folder.

How does our standard reach the branches?

Through templates at the organisation. The catalogue is maintained once and rolls out from there to the connected businesses — nobody on site creates tasks themselves. Change the standard and you change it in one place.

Our branches differ in size. Does every one have to do everything?

No. The shared catalogue covers what applies everywhere; what only comes up at individual sites is added there. A site with its own production runs tasks that a pure sales point never sees.

We work with a lot of temporary staff and apprentices. Does this help with instructions?

Yes. Instructions and briefings sit as their own entries in the system, each with a read confirmation and a date. With a changing line-up that is the only record that survives an inspection — for youth employment law as much as for fire safety.

How do we see where each branch stands?

Through the reporting per site and period: done, open, missed. Head office sees all businesses side by side, branch management only its own — the same figure, two points of view.
